Baby Shower Brunch




As Evi walked into her favorite bakery and coffee restaurant with her hubby, little did she know that we were all there to celebrate her baby shower with a lovely brunch and gifts for her first baby. 
We totally got her!

Consciously Delicious - Vegetarian Whole Weat Leek Quiche

This is a real treat that, thanks to the whole weat, light dairy products and leek becomes a lighter version of the buttery and rich traditional quiches.
I find it absolutely yummy!


*150g whole weat flour
*2 dl water 
*2,5 dl light cream
*1 egg
*1 tea cup grated parmesan cheese
*light cheese (my bf and I used some light raclette cheese left overs - so Swiss of me ;)!)
*1 leek
*3 tablespoons olive oil

And remeber: choose, if possible, local and organic ingredients to make your body and planet happy!
kneading dough 1.Preheat the oven to 200 °C. 
2.Mix flour, oil and water and create a nice and round dough ball. Knead it until it is smooth and elastic. If it is too sticky add some flour and continue until you reach the right consistence.

3.Stretch the dough into a flat round form, put it into a round baking tray and punch little holes in it with a fork. If you like your quiche dough to be well roasted, you can bake it for about 10 minutes in the oven before adding the main ingredients. Otherwise, just go for the next steps (which is what we prefered to do).

4.Wash and slice up your leek and place the pieces on the dough. 
Cut also the light cheese into pieces and spread it on the leek.

 5.Combine eggs, light cream and parmesan. Season with salt and pepper. Pour the egg&cream mixture over the vegetables.

6.Bake the quiche for about 30 minutes or until the egg&cream mixture is solidified and the dough is ready.

I love to eat this fabulous quiche as main dish with a simple and fresh salad, in order to combine it to something healthy and fresh that gives my body more vitamines, water and fibers.
